Do you recommend outsourcing the data entry and file maintenance to overseas services?

I have never done this in my own practice and am cautious about the idea because of possible liability issues. If you decided to use an overseas service, I’d check to see if they have a presence in your country. It would probably be wise to also check with your professional liability insurance (aka errors & omissions) as to whether any mishandling / errors by overseas contractors are covered. I’d also be sure to disclose in the engagement letter to clients that you work with an outsourced service.
